Enchilada Squares
Ingredients:
1 Lb. ground beef
1/4 Cup chopped onion
4 Eggs
1/3 Cup sliced ripe olives
2 Cups corn chips or crushed tostados
2/3 Cups evaporated milk
1 Can tomato sauce (8 oz.)
1 Envelope enchilada sauce mix
1 Cup shredded cheddar cheese

Brown meat and onions. Drain. Spread in bottom of a pan, 10x6x1 1/2. Beat next 4 ingredients and pour mixture over meat. Sprinkle with olives and chips. Bake uncovered 20 to 25 minutes at 350 degrees. Sprinkle with cheese. Bake 3 to 5 minutes longer.
